Quick Dinner Meal Plan for When You Don't Have Time

These dinners all take 30 minutes or less and you'll be using a lot of the same ingredients throughout the week, so no need for a long shopping list!

Use and Re-Use

Being creative goes a long way in the kitchen. For example, the frozen peas used in Monday's dinner can be used again in Thursday's shakshuka. Any leftover feta from Tuesday night can be put into Wednesday's dinner, even if it doesn't call for it. And, a glass of wine should be had with each meal even if it's not listed. Makes sense, right?

Monday

Fried Rice Loaded with Peas

Keeps up the Meatless Mondays with this fried rice recipe. Use white rice, brown rice or even quinoa if you prefer. Be sure to save some for tomorrow's dinner.

Tuesday

Avocado-Wild Rice Nectarine Chicken Salad

This salad is a summer favorite. The nectarine can be subbed for grapefruit, orange or peach if you'd like. Save time and buy rotisserie chicken, you'll make use of it this week!

Wednesday

Chicken Pasta with Herby Avocado Pesto Sauce

This creamy pesto is made with yogurt, fresh herbs and avocado. You can of course use store-bought pesto too, but you will make use of the leftover ingredients, so why not make it from scratch!

I have eggs for dinner on a regular basis. Not only are they quick to cook but they're full of good proteins. Here's where you throw in leftover herbs from last night and the leftover yogurt makes for a wonderful cooling element. Hold onto the leftover chard!
