Step 1
Blend the
Blue Cheese (65 g)
and
Unsalted Butter (40 g)
in the food processor (or beat) until creamy. Add
All-Purpose Flour (60 g)
,
Corn Starch (25 g)
,
Kosher Salt (2 g)
, and
Freshly Ground Black Pepper (as needed)
, process until mixture resembles a coarse meal.
Step 2
Bring the dough together with your hands and roll into a log, taking care not to over work the dough. Wrap in plastic wrap and chill for at least an hour.
Step 3
Preheat oven to 325 degrees F (160 degrees C).
Step 4
Slice dough into discs of 1/8 to 1/4-inch. Place on the parchment-lined baking sheet and bake for about 20 minutes or until golden brown. Transfer to a rack to cool.
Step 5
Serve with some Just Jan’s Fig Spread and enjoy!
