Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Place cupcake liners in muffin pan and set aside.
Step 3
Sift Self-Rising Flour (240 g) into a large bowl, add Butter (100 g) , Brown Sugar (140 g) , 1 Tbsp juice plus zest from whole Lemon (1) , Vanilla Extract (5 mL) and Eggs (2) . Beat with an electric mixer on low speed until the ingredients are combined. Then increase speed to medium, and beat mixture until smooth. Stir in Bananas (350 g) and mix well. Lastly, add in Dried Pitted Prunes (100 g) and fold well with a rubber spatula.
Step 4
Scoop banana mixture into muffin pan to 3/4 full and bake in preheated oven for about 25 minutes or test with a skewer till it comes out clean.
Step 5
Serve and enjoy!
