Step 1
Combine cooked Sweet Glutinous Rice Flour (9 g) and Snowskin Flour (60 g) in a large bowl and set aside.
Step 2
In a pot, add Water (75 g) , Powdered Confectioners Sugar (7 g) , and Crisco (15 g) together. Bring to boil until Crisco is melted, stir with a hand whisk.
Step 3
Pour the hot liquid mixture into the flour and use a rubber spatula to stir the mixture into a soft dough and leave to cool. Then knead the dough to smooth . Add more cooked glutinous rice flour if the dough is still too sticky.
Step 4
Divide the dough into 3 portions and add a little Food Coloring (to taste) - pink, green, yellow - to each piece of dough, knead smooth again.
Step 5
Weigh the dough to about 14-15 gram and wrap in the Lotus Seed Paste (180 g) filling and roll into ball shape again.
Step 6
Make the piggies - use Black Sesame Seeds (24) for the eyes.
Step 7
Serve and enjoy!
