Goddess Bowl
1 cup Fresh Baby Spinach
1/2 cup Canned Chickpeas
1/2 cup cubed Smoked Tofu
2 tablespoon halved Roasted Pecans
1 tablespoon Dried Cranberries
Tahini Goddess Dressing
1/4 cup Tahini
2 tablespoon Olive Oil
3 tablespoon Water
1 tablespoon Soy Sauce
1 teaspoon Sesame Oil
1/4 teaspoon Salt
to taste Freshly Ground Black Pepper

STEP 1
Warm Brown Rice (3/4 cup).
STEP 2
Cube and warm the Smoked Tofu (1/2 cup).
STEP 3
Chop the Cucumber (1/3 cup).
STEP 4
Grate the Carrot (1/3 cup).
STEP 5
Chop the Avocado (1/4).
STEP 6
Begin with a bed of brown rice. Add Fresh Baby Spinach (1 cup), Smoked Tofu, Canned Chickpeas (1/2 cup), Cucumber, Carrot, Avocado, Roasted Pecans (2 tablespoon) and Dried Cranberries (1 tablespoon).
STEP 7
Make the Vegan Tahini Goddess Dressing: Combine Tahini (1/4 cup), Lemon Juice (1/4 cup), Olive Oil (2 tablespoon), Water (3 tablespoon), Soy Sauce (1 tablespoon), Garlic (1 clove), Fresh Dill (1 tablespoon), Fresh Chives (1 tablespoon), Fresh Parsley (1 tablespoon), Sesame Oil (1 teaspoon), Salt (1/4 teaspoon), and Freshly Ground Black Pepper (to taste).
STEP 8
Whisk until combined. Taste and adjust seasoning to suit your liking. Once prepared, refrigerate this dressing.
STEP 9
Drizzle with goddess dressing.
