Aquafaba Marshmallow Topped Sweet Potato Casserole

Sweetened and spiced mashed sweet potatoes topped with a toasty "marshmallow" topping. You see, aquafaba, better known as the less sophisticated sounding “bean juice” (as in, the liquid from a can of chickpeas) happens to make really great meringue which is very very close to marshmallow cream. Marshmallow cream almost equals marshmallows. Let’s roll with this.

2 tablespoon Vegan Butter
2 tablespoon Brown Sugar
2 tablespoon Unsweetened Almond Milk
1/4 teaspoon Pure Vanilla Extract
1/4 teaspoon Ground Cinnamon
1/4 teaspoon Ground Ginger
1 pinch Pumpkin Pie Spice
1 pinch Salt
1 can (19 fluid ounce) Canned Chickpeas
1/4 teaspoon Cream of Tartar
1/2 cup Granulated Sugar

STEP 1
Preheat oven to 350 degrees F (170 degrees C).
STEP 2
Peel and chop Sweet Potato (800 gram) into 1 1/2-inch chunks. Transfer to a large saucepan and cover with water. Add about 1 inch of extra water. Bring to a boil over high heat and cook until potatoes are fork tender.
STEP 3
While potatoes are boiling, take 1/2 of the liquid from the Canned Chickpeas (1 can) and begin whipping aquafaba marshmallow topping.
STEP 4
Combine the chickpea liquid and Cream of Tartar (1/4 teaspoon). Beat on high until soft peaks form. Depending on the quality of your chickpea liquid this can take just a few minutes up to 10 minutes.
STEP 5
Slowly add the Granulated Sugar (1/2 cup) and continue beating until stiff peaks form. Rub a small amount of the meringue between your fingers, and if the mixture feels gritty continue beating until the sugar dissolves.
STEP 6
Drain potatoes and mash with Vegan Butter (2 tablespoon), Brown Sugar (2 tablespoon), Unsweetened Almond Milk (2 tablespoon), Pure Vanilla Extract (1/4 teaspoon), Ground Cinnamon (1/4 teaspoon), Ground Ginger (1/4 teaspoon), Pumpkin Pie Spice (1 pinch), and Salt (1 pinch). Mix well and taste. Adjust salt to suit your preference.
STEP 7
Layer the sweet potatoes into the bottom of a 5-inch by 7-inch casserole dish. Top with aquafaba mixture, and bake for 15-20 minutes. Finish under the broiler if the topping isn't toasty enough.
