Use up your holiday leftovers to make this easy vegan twist on shepherd's pie. You can use this recipe as a guideline, scaling it up or down depending on how many leftovers you’re working with.

1 cup thinly sliced Vegan Meat
2 cup roasted Mixed Vegetables
1 1/2 cup Mushroom Gravy

STEP 1
Preheat oven to 375 degrees F (190 degrees C).
STEP 2
Chop Mixed Vegetables (2 cup) and Vegan Meat (1 cup) into bite-sized or smaller pieces.
STEP 3
Layer vegetables and chopped holiday roast into a 5-inch by 7-inch casserole dish.
STEP 4
Top with Mushroom Gravy (1 1/2 cup), ensuring all vegetables and roast are well coated.
STEP 5
Spoon Mashed Potatoes (2 1/2 cup) over the top of the base, starting with the edges to form a seal and working inwards.
STEP 6
Place casserole dish on a baking sheet or layer of aluminum foil to prevent a messy cleanup if the filling boils over.
STEP 7
Bake for 35 minutes, or until the gravy is bubbling and the mashed potatoes are slightly browned and crisp on top. If necessary, brown the mashed potato topping under the broiler for a couple of minutes.
STEP 8
Let sit for 5-10 minutes before serving.
STEP 9
Serve and enjoy!
