Cooking Instructions

Step 1
Place the Digestive Biscuits (3/4 cup) in a processor/Ziploc bag and blend into a fine meal. Stir in Clarified Butter (2 Tbsp) . Set aside.
Step 2
Prepare the cheesecake filling. Place the Fresh Cream (5.5 oz) , Caster Sugar (3 Tbsp) , and Agar-Agar Powder (1 tsp) in a saucepan and whisk until smooth. Simmer over very low heat for 2-3 minutes stirring often.
Step 3
Strain and pour this over the White Chocolate (2/3 cup) and leave to stand until the chocolate melts. Add the Almond Extract (to taste) and whisk until smooth.
Step 4
Whisk the chocolate mix into the Cream Cheese (2/3 cup) just before you need it. Taste and adjust sweetness as desired.
Step 5
Make the cherry jelly by whisking Cherries (1/2 cup) , Water (6 oz) , Caster Sugar (3 Tbsp) , and Agar-Agar Powder (1/4 tsp) together and simmer for 5-7 minutes over very low heat until the cherries soften and break down.
Step 6
Strain and add the Lime (1) . Leave to cool to room temperature. The jelly can be reheated gently and cooled to pourable consistency before using. If you pour hot jelly over the cheesecake filling, it’ll make the jelly cloudy.
Step 7
To assemble, press the biscuit base firmly into the bottom of the ramekins (weck jars or glasses), approximately 35 g in each. Top with a layer of Cherries (1 cup) about 10-12, to make a flat layer.
Step 8
Pour the cheesecake filling over the cherries and place the ramekins in the freezer for 30-45 minutes until the cheesecake is firm.
Step 9
Gently pour the jelly over the cheesecake. Chill for 3-4 hours or overnight. Enjoy!
