Step 1
Preheat the oven to 325 degrees F (160 degrees C). Line a cookie sheet with parchment.
Step 2
In a small bowl, mix together
Chia Seeds (1 Tbsp)
and
Water (3 Tbsp)
. Set aside.
Step 3
In the bowl of a stand mixer or a large bowl, place
Whole Wheat Flour (1 1/4 cups)
,
Brown Sugar (1/2 cup)
,
Instant Coffee (1 Tbsp)
,
Salt (1/4 tsp)
, and
Baking Soda (1/2 tsp)
, and stir to mix on low speed.
Step 4
Add
Clarified Butter (1/3 cup)
, chia seed mixture,
Vanilla Extract (1 tsp)
, and
Dark Chocolate Chips (1/4 cup)
and stir until the cookie dough comes together. Add the
Thick Yogurt (1 Tbsp)
to the dough when it looks slightly dry.
Step 5
Push dough into heart-shaped molds and bake in the oven for 20-25 minutes, or until firm.
Step 6
Immediately top hot baked hearts with
Dark Chocolate Chips (2 Tbsp)
, and leave for 5 minutes until melted, then spread them over the top.
Step 7
Scatter over with
Cocoa Nibs (2 Tbsp)
, and allow to cool completely.
