Step 1
Warm
Fresh Cream (14 oz)
with the
Granulated Sugar (3 Tbsp)
until the sugar has melted. Add in the
Lime (1/2)
and steep for about 1 hour.
Step 2
Bloom the
Gelatin Powder (1/2 Tbsp)
in the remaining
Fresh Cream (2 oz)
for 5 minutes, until soft.
Step 3
Reheat the cream to a bare simmer, and take off the heat. Stir in the bloomed gelatin. Once well mixed, strain and divide among serving glasses. Leave to set in the fridge for 4-5 hours.
Step 4
Once set, top the panna cotta with
Fresh Strawberries (1 1/3 cups)
,
Edible Flowers (to taste)
, and a sprig of
Fresh Mint (to taste)
each.
Step 5
Pour over the
Champagne (2 cups)
and serve immediately. Enjoy!
