Step 1
Preheat oven to 375 degrees F (190 degrees C). Grease a 15 x 10-inch jelly-roll pan and line it with wax paper. Grease and flour the paper. Sprinkle a thin, cotton kitchen towel with 1/4 cup Powdered Confectioners Sugar (1/4 cup) . Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.
Step 2
Combine the All-Purpose Flour (3/4 cup) , Baking Powder (1/2 tsp) , Baking Soda (1/2 tsp) , Ground Cinnamon (1/2 tsp) , Ground Cloves (1/2 tsp) , and Salt (1/4 tsp) in a small bowl.
Step 3
Beat the Large Eggs (3) and Granulated Sugar (1 cup) in a large mixer bowl until thick. Beat in the LIBBY'S® 100% Pure Pumpkin (2/3 cup) and stir in the flour mixture.
Step 4
Spread evenly into the prepared pan. Sprinkle with Walnuts (1 cup) .
Step 5
Bake for 13 to 15 minutes or until the top of the cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.)
Step 6
Immediately loosen and turn the cake onto the prepared towel. Carefully peel off the paper. Roll up the cake and towel together, starting with the narrow end. Cool on a wire rack.
Step 7
Beat the Cream Cheese (1 pckg) , 1 cup Powdered Confectioners Sugar (1 cup) , Butter (1/3 cup) , and Vanilla Extract (1 tsp) in a small mixer bowl until smooth.
Step 8
Carefully unroll the cake. Spread the cream cheese mixture over the cake. Reroll the cake, wrap it in plastic wrap, and refrigerate for at least one hour.
Step 9
Sprinkle with Powdered Confectioners Sugar (to taste) before serving, if desired.
