Step 1
Preheat the oven to 350 degrees F (180 degrees C). Grease a 9 x 5-inch loaf pan with Nonstick Cooking Spray (as needed) .
Step 2
Combine the All-Purpose Flour (2 cups) , Pumpkin Pie Spice (1/2 Tbsp) , Baking Powder (1/2 Tbsp) , Salt (1 tsp) , and Baking Soda (1/2 tsp) in a medium bowl.
Step 3
Blend the LIBBY'S® 100% Pure Pumpkin (1 can) , Granulated Sugar (1/2 cup) , Brown Sugar (1/2 cup) , Fat-Free Evaporated Milk (1/2 cup) , Large Egg (1) , Egg White, and Vegetable Oil (1 Tbsp) in large mixer bowl. Add flour mixture and mix just until moistened.
Step 4
Pour the mixture into the prepared loaf pan and sprinkle with Chopped Nuts (1/4 cup) .
Step 5
Bake for 60 to 65 minutes or until a wooden pick inserted in the center comes out clean.
Step 6
Cool the pan on a wire rack for 10 minutes. Move to a wire rack to cool completely.
