This tasty vegan rice dish is flavored with lime zest, lime juice, and roughly chopped cilantro, but the best part is it can be prepared in under 30 minutes!

Ground Black Pepper
In a large pan add Olive Oil (2 Tbsp) and Jasmine Rice (1 1/2 cups). Stir over medium heat for 4-5 minutes
Once rice starts toasting add Garlic (1 clove), zest from Limes (2) and Ground Black Pepper (1/8 tsp) and stir well.
Next, add Salt (3/4 tsp) and stir.
Turn the heat up to medium-high and add the Vegetable Stock (1 cup) and Water (2 cups). Bring up to a boil.
Place the lid on, lower the heat and let it simmer for about 15 minutes.
After the rice is about 90 percent cooked, turn of the heat and let it continue to cook with the lid on for another 10 minutes
Using a fork, fluff up the rice. Add the Lime Juice and the Fresh Cilantro (1 cup). Mix well, serve and enjoy!
