Fried chicken made a bit healthier, oven fried! Give this recipe a try and you'll have delicious crispy fried chicken that the whole family is sure to enjoy. If you don't want to break down the chicken yourself, you can just buy a mix of bone-in breasts, thighs, and drumsticks in the same weight.

Cooking Instructions
1.
Start by trimming the fat and cutting up the Whole Chickens (2.5 lb). A sharp knife will really help with this!

To make a brine for the chicken, in a bowl add Buttermilk (2 cups), Green Caribbean Seasoning (1 Tbsp), Hot Sauce (1 tsp), and 3/4 tablespoon of Salt (3/4 tsp). Stir together with a whisk.

Place the chicken in a tray and pour the brine all over. Cover the tray and let it marinate a couple of hours or overnight.

Once it has been marinated, dump the contents out into a strainer and shake it so as to remove the liquid.

Preheat your over to 400 degrees F (204 degrees C).

In a small bowl add the Eggs (2), 1/4 teaspoon of Freshly Ground Black Pepper (1/4 tsp) and Hot Smoked Paprika (1/2 tsp). Beat together and pour over the chicken, making sure to coat every chicken piece in the egg mixture.

In a large plate add All-Purpose Flour (1 1/2 cups), Salt (1/4 tsp), Ground Allspice (1/4 tsp) and Freshly Ground Black Pepper (1/4 tsp) and mix. Take the chicken pieces and toss them in the flour mixture and set aside, letting them rest for 5-10 minutes.

After they've rested, coat them a second time in the breading mixture and set on a baking tray with a baking rack. Brush the top of the chicken pieces with a mixture of Olive Oil (1 1/2 Tbsp) and Butter (1 1/2 Tbsp).
9.
Place in the middle rack of the preheated oven to bake for 50 minutes.
10.
Set the oven to broil for a few minutes after 50 minutes have elapsed, to darken the skin a little bit more. Serve with your favorite sides.
