Cut each Passion Fruits (6) in half and using a spoon, scrape out the pulp. Yes, there will be black or grey seeds.

Add passion fruit, Water (6 cups), Granulated Sugar (1/2 cup), Almond Extract (3 dashes), Angostura Bitters (3 dashes) and juice of the Lime (1/2) into your blender and work on a very low setting. The goal is to dilute the sugar and remove the pulp of the seeds to fully flavor the juice. It will take about 30 seconds to a minute on a low setting.

Strain with a fine strainer to remove the seeds, and then place in the fridge to chill. It helps to strain it directly into a pitcher! Do taste and adjust the sugar if needed, and you’re free to use any sweetener you normally use.

Serve chilled and enjoy this refreshing beverage.
