Sloppy Mushroom Joes w/ Rosemary Honey Goat Cheese
As a meat lover, I can honestly say this joe is SUPER satisfying. Topped with a little rosemary honey goat cheese, it’s cafeteria lunch lady approved.
2 tbsp Olive Oil
24 oz Cremini Mushroom
1/2 cup Yellow Onion
1/2 cup Tomato Paste
2 tbsp Red Wine Vinegar
2 tbsp Worcestershire Sauce
1 tbsp Molasses
2 tbsp Rosemary
1 dash Tabasco Sauce
to taste Salt and Pepper
4 Brioche Buns
1 4 oz. Plain Goat Cheese Log
1 tsp Honey
In a food processor, add the sliced Cremini Mushroom. Pulse until finely chopped.
Dice the Yellow Onion. Chop the fresh Rosemary and divide in half.
In a large skillet, add the Olive Oil, diced onions, and Salt and Pepper. Sauté until onions have softened about four minutes.
Next, add the mushrooms and a tablespoon of chopped rosemary and cook for another three minutes.
Add the Tomato Paste, Worcestershire Sauce, Tabasco Sauce, Molasses, Red Wine Vinegar, and stir to combine. Continue to cook until everything is well combined. Turn off heat.
For the topping: in a bowl, combine the remaining rosemary, Honey, 4 oz. Plain Goat Cheese Log and Salt and Pepper.
Divide the sloppy joes between Brioche Buns. Top the sloppy joes with a dollop of the rosemary honey goat cheese and enjoy!.
