Preheat the oven to 350 degrees F, and shred the Zucchini (1 cup) with a grater.
Mix the All-Purpose Flour (1 1/2 cup), Baking Powder (1 1/2 teaspoon), Baking Soda (1 teaspoon), Prymal® Coffee Creamer (1 cup) and Salt (1/4 teaspoon) together.
Add in shredded zucchini and Almond Milk (1/2 cup).
Stir well until everything is incorporated and you don't have any stray lumps.
Coat the muffin tray with butter or non-stick spray and scoop batter in tray.
Bake at 350 degrees F for about 20 minutes or until a toothpick comes out clean. Enjoy!
