Pour the 15 Bean Soup Mix (3 cups) in a large mixing bowl and add plenty of cold tap water. Let the beans soak overnight.

In a high pan, pour a good splash of Olive Oil (as needed) and place it over medium heat. Once hot, add the Yellow Onion (1), Garlic (5 cloves), Fresh Rosemary (2 sprigs), and Bay Leaves (3). Stir and cook for about 5 minutes.
