Simmer Pork Shanks (5) in stock seasoned with Star Anise (to taste), Ground Cinnamon (to taste), Garlic Paste (to taste), Salt (to taste), Ground Black Pepper (to taste), and grated Fresh Ginger (to taste) until tender but NOT falling apart.
