Step 1
Heat Olive Oil (1 Tbsp) in a medium pan over medium heat. Add the Sweet Potato (1) and Oats (1 1/3 cups) , and let it all fry until slightly brown (approx.10 minutes).
Step 2
Add the Mushrooms (3) , Garlic (2 cloves) , Ground Turmeric (1 tsp) , Ground Nutmeg (1 tsp) , Ground Cumin (1 tsp) , and Salt and Pepper (to taste) and cook for another 2 minutes.
Step 3
Pour in the Vegetable Stock (2 2/3 cups) , bring to a boil, then simmer on a low heat for around 15 minutes.
Step 4
Lightly toast the Pumpkin Seeds (3 1/2 Tbsp) in a pan and set aside.
Step 5
Now divide the porridge between 2 bowls, sprinkle with Fresh Parsley (to taste) and toasted pumpkin seeds and enjoy!
