Step 1
Preheat oven to 390 degrees F (200 degrees C).
Step 2
Place
Cauliflower (1 head)
steaks on a baking tray.
Step 3
In a small bowl, whisk together
Extra-Virgin Olive Oil (1/4 cup)
,
Garlic (2 cloves)
,
Paprika (1 tsp)
,
Chili Powder (1 tsp)
,
Dried Oregano (1 tsp)
,
Salt and Pepper (to taste)
.
Step 4
Brush the olive oil mixture equally over the tops of the cauliflower steaks.
Step 5
Roast cauliflower steaks in the oven for 35-40 minutes until tender and golden brown.
Step 6
For the smoky spinach lentils, heat up the
Olive Oil (1 tsp)
in a medium pot. Add in the
Garlic (1 clove)
and fry for a minute or so. Then add in
Smoked Paprika (1 tsp)
and
Ground Cumin (1 tsp)
and fry for further 30 seconds.
Step 7
Next add in the
Lentils (1 can)
,
Fresh Spinach (1 cup)
, and
Distilled White Vinegar (1 Tbsp)
. Fry for 3-4 minutes or until the spinach is wilted.
Step 8
If the lentils are too thick or sticking too the pot add splash of water. Taste, and season with
Salt and Pepper (to taste)
accordingly.
Step 9
Serve the lentils on the top of the cauliflower steaks with some
Cherry Tomatoes (to taste)
,
Yogurt (to taste)
, and
Crushed Red Pepper Flakes (to taste)
