Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Add the Peaches (3 1/2 cups) , Ground Cinnamon (1/2 tsp) , Vanilla Extract (1/2 tsp) , Chickpea Flour (1 Tbsp) , Lemon Juice (1 tsp) , Agave Syrup (1/2 Tbsp) and Salt (1 dash) in a large bowl, making sure everything is well-mixed with peaches intact.
Step 3
In a food processor, mix together the Oats (3/4 cup) , Ground Flaxseed (2 Tbsp) , Chickpea Flour (2 Tbsp) , Slivered Almonds (1/3 cup) , Vanilla Extract (1/2 tsp) , Agave Syrup (1/2 Tbsp) , and Water (1 1/2 Tbsp) .
Step 4
Process until they start to stick together a bit but not so finely ground that the mix loses texture.
Step 5
Evenly distribute the peach slices among 5 small ramekins, top with topping, and place on a baking sheet.
Step 6
Cook for 20-25 minutes, or until your home smells amazing and the insides of the crumble begin bubbling.
Step 7
Let stand a few minutes to cool a bit before serving.
Step 8
Top with Vegan Vanilla Ice Cream (to taste) for the full effect. Enjoy!
