Preheat the oven to 350 degrees F (180 degrees C).
Add the Peach (3 1/2 cup), Ground Cinnamon (1/2 teaspoon), Vanilla Extract (1/2 teaspoon), Chickpea Flour (1 tablespoon), Lemon Juice (1 teaspoon), Agave Syrup (1/2 tablespoon) and Salt (1 dash) in a large bowl, making sure everything is well-mixed with peaches intact.
In a food processor, mix together the Oats (3/4 cup), Ground Flaxseed (2 tablespoon), Chickpea Flour (2 tablespoon), Slivered Almonds (1/3 cup), Vanilla Extract (1/2 teaspoon), Agave Syrup (1/2 tablespoon), and Water (1 1/2 tablespoon).
Process until they start to stick together a bit but not so finely ground that the mix loses texture.
Evenly distribute the peach slices among 5 small ramekins, top with topping, and place on a baking sheet.
Cook for 20-25 minutes, or until your home smells amazing and the insides of the crumble begin bubbling.
Let stand a few minutes to cool a bit before serving.
Top with Vegan Vanilla Ice Cream (to taste) for the full effect. Enjoy!
