Blend on high until it begins to form a coarse paste, stopping the food processor and scraping down the sides of the bowl as you go.

Add Maple Syrup (1/4 cup), Coconut Oil (1 tsp), and Peppermint Oil (1 tsp).

Blend on high for a few more minutes until well combined.

Scooping a tablespoon of the mixture at a time, firmly pack together, shape into a ball and then flatten into a disc. Place on a baking paper-lined tray or cooling rack. This should make about 12 patties. Place in the refrigerator to harden.

Melt the Dark Chocolate (1/2 cup) along with the remaining Coconut Oil (1 tsp) Remove patties from the refrigerator and discard baking paper.
