Easy Cucumber Kimchi (Spicy!)

In keeping with my promise to make more pickle recipes this year, I've come up with an easy and delicious Korean classic: cucumber kimchi.

Ingredients

1/2 Medium Onion
4 clove Garlic
1/2 cup Red Chili Powder
4 tablespoon Fish Sauce
1 tablespoon Granulated Sugar
1/4 cup Water
2 tablespoon Rice Vinegar
1 teaspoon Kosher Salt
1 teaspoon Sesame Seeds
1 teaspoon Sesame Oil

STEP 1
Cut the English Cucumber (1) into four pieces, then cut each piece into 4 quarters. Place these in a large tupperware container.
STEP 2
Chop the Carrot (1) and Onion (1/2) into thin strips. Slice the Fresh Chives (1 cup) into thin strips.
STEP 3
Mix together Fish Sauce (4 tablespoon), Granulated Sugar (1 tablespoon), Garlic (4 clove), Rice Vinegar (2 tablespoon), Red Chili Powder (1/2 cup), Water (1/4 cup), Sesame Seeds (1 teaspoon), Sesame Oil (1 teaspoon), and Kosher Salt (1 teaspoon).
STEP 4
Pour the sauce over the vegetables and using your hands (covered with gloves) or a spoon, spread/mix evenly to coat the vegetables.
STEP 5
Serve immediately or leave for a few hours for softer texture and more infused flavors.
