Step 1
Dressing: Place juice of Lime (1) , Extra-Virgin Olive Oil (2 Tbsp) , Salt (to taste) , Freshly Ground Black Pepper (to taste) in a bowl, and whisk to mix with a fork. Taste and adjust the seasoning.
Step 2
Set up the KitchenAid Stand Mixer with the spiralizer attachment with the medium sized noodle blade fitting.
Step 3
Put the Zucchini (1) through it, followed by the Cucumber (1) .
Step 4
Place in a large bowl with balled Watermelon (1/4) , Walnuts (1/2 cup) , pour over salad dressing, and toss gently to mix. Adjust seasoning if required. Scatter over with Crumbled Feta Cheese (1/2 cup) and Fresh Mint (to taste) .
Step 5
Chill for an hour before serving to allow the flavors to mature.
