Dressing: Place juice of Lime (1), Extra-Virgin Olive Oil (2 tablespoon), Salt (to taste), Freshly Ground Black Pepper (to taste) in a bowl, and whisk to mix with a fork. Taste and adjust the seasoning.
Set up the KitchenAid Stand Mixer with the spiralizer attachment with the medium sized noodle blade fitting.
Put the Zucchini (1) through it, followed by the Cucumber (1).
Place in a large bowl with balled Watermelon (1/4), Walnut (1/2 cup), pour over salad dressing, and toss gently to mix. Adjust seasoning if required. Scatter over with Crumbled Feta Cheese (1/2 cup) and Fresh Mint (to taste).
Chill for an hour before serving to allow the flavors to mature.
