Step 1
Clean your
Oyster Mushrooms (6 oz)
and cut them into strips that are ¼-½-inch thick. Try to get them all about the same thickness so they'll dry more evenly.
Step 2
Stir the
Toasted Sesame Oil (1/2 Tbsp)

Reduced Sodium Soy Sauce (1 1/2 Tbsp)
,
Rice Vinegar (2 Tbsp)
,
Liquid Smoke (1/2 tsp)
,
Garlic Powder (1/4 tsp)
,
Onion Powder (1/4 tsp)
,
Ground Black Pepper (1/8 tsp)
, and
Crushed Red Pepper Flakes (1/8 tsp)
together in a small bowl.
Step 3
Put your mushrooms in a small food-safe container with a lid. Pour the marinade over the slices and stir the mushrooms to coat them with the marinade. Put the lid on the container and refrigerate.
Step 4
Let marinate overnight. Stir the container's contents or give it a (gentle) shake every few hours if the marinade is pooling on the bottom. The mushrooms should absorb all of the marinades.
Step 5
Spray the air fryer racks wth
Nonstick Cooking Spray (as needed)
. Fry the mushroom jerky at 180 degrees F (85 degrees C) for approximately 2 hours total. Flip the mushrooms over and switch the positions of the racks in the air fryer oven after cooking for 30 minutes, 1 hour, 1½ hours, and 1 hour 50 minutes.
Step 6
After 2 hours of air frying, you can air fry any mushroom pieces that are not done to your liking for an additional 10 minutes. Let cool and enjoy!
