Clean your Oyster Mushroom (6 ounce) and cut them into strips that are ¼-½-inch thick. Try to get them all about the same thickness so they'll dry more evenly.
Stir the Toasted Sesame Oil (1/2 tablespoon)l Reduced Sodium Soy Sauce (1 1/2 tablespoon), Rice Vinegar (2 tablespoon), Liquid Smoke (1/2 teaspoon), Garlic Powder (1/4 teaspoon), Onion Powder (1/4 teaspoon), Ground Black Pepper (1/8 teaspoon), and Crushed Red Pepper Flakes (1/8 teaspoon) together in a small bowl.
Put your mushrooms in a small food-safe container with a lid. Pour the marinade over the slices and stir the mushrooms to coat them with the marinade. Put the lid on the container and refrigerate.
Let marinate overnight. Stir the container's contents or give it a (gentle) shake every few hours if the marinade is pooling on the bottom. The mushrooms should absorb all of the marinades.
Spray the air fryer racks wth Nonstick Cooking Spray (as needed). Fry the mushroom jerky at 180 degrees F (85 degrees C) for approximately 2 hours total. Flip the mushrooms over and switch the positions of the racks in the air fryer oven after cooking for 30 minutes, 1 hour, 1½ hours, and 1 hour 50 minutes.
After 2 hours of air frying, you can air fry any mushroom pieces that are not done to your liking for an additional 10 minutes. Let cool and enjoy!
