In the medium bowl, whisk together All-Purpose Flour (1 cup), Whole Wheat Pastry Flour (1 cup), Dutch Processed Cocoa Powder (1/2 Tbsp), Baking Powder (1/2 tsp), Baking Soda (1/2 tsp), ground spices, Kosher Salt (1/4 tsp) and Dark Chocolate (2/3 cup).

In a large bowl (or a stand mixer) add Unsalted Butter (1/2 cup), Granulated Sugar (2/3 cup), Vanilla Extract (1 tsp), zest from Lemon (1/8) and Orange (1/8). Whisk for 1 minute until combined but not over aerated.
