Sugar-Free Chocolate Peanut Butter Lara Bars
These Sugar-Free Chocolate Peanut Butter Lara Bars contain only 5 ingredients and provide a great source of energy!
14 Medjool Dates
1/2 cup Raw Cashews
2 Tbsp Raw Cashews
1/4 cup Natural Unsweetened Cocoa Powder
2 Tbsp Organic Peanut Butter
1/4 cup Dry Roasted, Unsalted Peanuts
Add Raw Cashews, Medjool Dates, Dry Roasted, Unsalted Peanuts, Natural Unsweetened Cocoa Powder, and Organic Peanut Butter to bowl of food processor, blend for one minute.
Line an 8x8 square dish with plastic wrap, remove mixture from food processor bowl and smooth into even layer. The mixture will be thick - I found washing my hands, them getting them slightly wet and using them to press down and spread the mixture out was the easiest. Then use a slightly damp spatula to create a smooth finish.
Chop Raw Cashews, then sprinkle across the bars. Place another piece of plastic wrap over the bars and press the cashew pieces down into the bars.
Refrigerate 15-20 minutes, then remove plastic and bars from 8x8 pan and cut into 12 even bars. Store in airtight container in refrigerator for up to one week.
