Preheat the broiler and set the racks in the oven to the center.

In a medium bowl whisk together the Farmhouse Eggs® Large Brown Eggs (4), Farmhouse Eggs® Large Brown Eggs (8), Nonfat Plain Greek Yogurt (1/2 cup), and a dash of Salt (to taste) and Ground Black Pepper (to taste).

In a 10-inch nonstick or cast iron oven-proof skillet melt the Vegan Butter (2 Tbsp).

Add the Leeks (2) and cook on medium heat for 4 minutes until fragrant, stirring often.

Add the Asparagus (1 bunch) and cook for 4 minutes until slightly soft, stirring often.

Pour the egg mixture over the vegetables and then sprinkle with the Swiss Cheese (1 cup).

Turn the heat down and cook for 9 minutes in the pan.

The frittata will start to set with the center still slightly liquid.

Transfer to the oven and broil for 4 minutes until the top is golden brown and the center is set.
