Combine together All-Purpose Flour (60 g), Corn Flour (1 tsp), Yogurt (1 tsp), and Salt (to taste). To this, add Water (80 mL), Black Vinegar (1/4 tsp), and Food Coloring (1 pinch) and make a batter. The batter should have a flowing consistency but it should be thick as well.

Add Caster Sugar (135 g) and water to a pan and let it boil. Once it boils, add juice from Lime (1/4). Remove any dirt that floats on the sugar syrup and let it boil until it reaches thread consistency.

To the jilebi batter, add Fruit Salt (1/2 tsp) and mix well. Pour this batter to a squeeze bottle or piping bag.
