Step 1
Preheat oven to 350 degrees F (180 degrees C).

Prepare three (8-1/2 x 4-1/2 x 2-1/2) loaf pans. Cut parchment paper to fit the bottom of each loaf pan. Spray pan with cooking spray. Place parchment on the bottom of the pan. Beat

in a small bowl.

In a large bowl, combine
Granulated Sugar (600 g)

Canola Oil (240 mL)
, and eggs. Mix with a hand-mixer on medium speed until well blended. Add
Canned Pumpkin Purée (455 g)
and blend well.
Step 4
In a medium bowl, sift together
All-Purpose Flour (435 g)

Baking Powder (4 g)

Baking Soda (9 g)
,
Salt (6 g)
,
Ground Cinnamon (3 g)
,
Ground Cloves (1 g)
,
Ground Mace (as needed)
,
Ground Allspice (2 g)
, and
Ground Nutmeg (2 g)

Step 5
Add a little at a time to the wet ingredients, mixing after each addition until combined. Add
Water (160 mL)
, a little at a time, and continue mixing on low speed until batter is smooth. Pour batter evenly into each of the loaf pans.
Step 6
Bake for 50-60 minutes, checking with a toothpick at 50 minutes for doneness. Let the bread cool on a rack before removing from pans.
