Author's Notes

Pasture-raised eggs are your best bet, but that doesn’t make conventional eggs dangerous or lacking nutrition. Eggs in general, still contain a plethora of nutrients and can be a part of a healthy diet. Just keep in mind: what we eat isn’t the only thing that matters it also matters what our food eats.

Cooking Instructions

Step 1
Set oven to 400 degrees F (200 degrees C).
Step 2
In a medium bowl, combine Organic Eggs (10) , Milk (240 mL) , Salt (6 g) , Smoked Paprika (2 g) , Fresh Thyme (as needed) and Ground Black Pepper (to taste) . Whisk until combined, set aside.
Step 3
Heat cast iron skillet (or other oven-proof skillet) over medium heat. Add Olive Oil (15 mL) , once warm, add Garlic (4 cloves) and Onion (1/4) and sauté for 5 minutes. Add Broccoli (3 heads) , sauté another 5 minutes.
Step 4
Then and Spinach Leaves (1/2 bunch) and sauté just until spinach starts wilting. Sprinkle Cheddar Cheese (60 g) over the broccoli spinach mixture.
Step 5
Once it starts melting, pour egg mixture over broccoli mixture, sprinkle a bit more cheese over top and cook just until the sides start setting, for 5 minutes.
Step 6
Put skillet in oven and bake for 20 minutes. You can also test doneness by cutting into the center, if egg runs into the cut, cook for another couple minutes. Once cooked, remove from heat and enjoy!
