Author's Notes

You can use any tropical fruit you want. If using citrus fruit like oranges or grapefruit, cut it into supremes.

Cooking Instructions

Step 1
Use a microplane or fine grater to grate Fresh Ginger (2.5 cm) onto a cutting board or into a bowl.
Step 2
Set a fine mesh strainer over a small microwaveable bowl. Transfer ginger pulp and any juices to the strainer. Press down on the pulp with the back of a spoon to capture the ginger's juices in the bowl. Discard solids.
Step 3
Add half the Jalapeño Pepper (1) , Lime (1/2) , and Honey (85 g) to the ginger juice.
Step 4
Microwave for 20 seconds on high. Stir. Microwave another 20 seconds or until mixture starts to bubble. Set aside to cool while you prep the fruit.
Step 5
Place Orange (1) , Kiwifruit (1) , Fresh Strawberry (1) , Banana (1) , Star Fruit (1) , Grapefruit (1) , Pineapple (1) in a medium bowl.
Step 6
Add the remaining minced jalapeño.
Step 7
Toss the salad with dressing just before serving.
