They didn’t quite taste the same as time went on and their named changed to Chili Cheese Burrito- now they have disappeared from the Taco Bell menu completely. This is the healthier version of that.

step 1
To make cheese sauce, peel and cut Russet Potatoes (3) into medium pieces. Add to large pot with Baby Carrots (1 bag) and 1 cup of water. Cover and boil until soft making sure they don't burn.

Drain potatoes and carrots, put into food processor with Nutritional Yeast (20 g), Canola Oil (80 mL) and Garlic Powder (1 Tbsp). Blend until smooth. Add water if you want a thinner sauce.

Heat the Vegan Ground Beef (1 pckg) in a pan with a little Oil (as needed) for a couple of minutes.

Add 1/2 cup of beef, 1/2 cup cheese sauce, and 1/4 cup of Enchilada Sauce (225 g) to a Whole Wheat Tortillas (4) fold and heat for 20-30 seconds in the microwave.
