How To Shuck Corn Easily In The Microwave

If working with a whole ear of corn, it can be difficult to remove it from the husk and all the hair or corn silk. This trick may be the easiest way to shuck corn just by using a microwave. Place your ear of corn in a microwave then microwave it for 60 seconds. When getting it from the microwave, make sure to use a towel since the corn cob can be too hot to touch. Cut the stalk or bottom part of the cob just until the first row of the kernel or about half an inch from the stalk. Hold the corn on the other end and give it a good downward shake until the clean corn cob slides out.

Ingredients & Substitutions

  • Corn Cob - you can also use canned kernel corns but it is suggested to use whole corn on the cob since you will also broil or grill the corn for extra charred flavor. Do not add sugar if you are using canned corn since canned corn is usually soaking in syrup and already sweet.
  • Mayonnaise - use Japanese style mayonnaise which is made only with egg yolks. You can also use regular mayonnaise or make your own Classic Mayonnaise recipe or if you want a vegan option, here is a Vegan Mayonnaise recipe.
  •  Lime - fresh lime juice adds freshness and acidity cutting through the creaminess of mayonnaise and cheeses.
  • Cotija Cheese - a popular Mexican cheese that is crumble and salty. You can substitute it with feta or parmesan cheese.
  • Fresh Mozzarella Cheese Ball - this type of cheese melts great and gives you the satisfying cheese pull with every scoop!

  • Add in some granulated sugar if the corn you’re using are not sweet corn. Give the corn mixture a quick taste before broiling it to adjust the flavor.

Author's Notes

Save the cobs (you can freeze them) and use them to make soup broths.
Taste the corn and decide if it is sweet enough for you. Only use sugar if your corn is not sweet. Do not use it if you are using canned corn since canned corn is usually soaked in sugar syrup and is already very sweet.
Substitute the corn for canned corn if you are in a rush.
Grilling the corn is optional.

Cooking Instructions

Step 1
Remove the husk and leaves of the Corn Cobs (2) .
Step 2
Brush the corn with a bit of oil and grill or broil the corn on high heat until brown and charred.
Step 3
Shave the kernels off of the corn cob and place it in a large bowl.
Step 4
Crumble up the Cotija Cheese (40 g) and add it to the bowl of corn.
Step 5
Squeeze the Lime (1/4) over the corn. Add in the Cayenne Pepper (2 g) , Mayonnaise (35 g) and Granulated Sugar (8 g) if corn is not sweet. Mix well.
Step 6
Set the stove to medium heat and melt the Butter (15 g) in a pan. Add in the corn mixture and cook for 10-15 minutes.
Step 7
Turn off the heat, add in the Scallions (1 stalk) and mix together, then move the corn to an oven-safe pan and top with Fresh Mozzarella Cheese Ball (260 g) .
Step 8
Broil for 3-5 minutes or until the cheese has melted at the top and is brown. Serve warm with tortilla chips and additional lime if desired.
