Step 1
In a medium saucepan over medium-high heat, stir together the
Fresh Strawberries (600 g)
, juice of the
Lemon (1/2)
,
Corn Starch (6 g)
, and
Salt (1 pinch)
, stirring until the cornstarch dissolves.
Step 2
Bring to the boil, stirring constantly. Stir in the
Water (80 mL)
. Cover and simmer on a medium-low heat for 10 minutes.
Step 3
If you want a smooth jam, mash the strawberries with a potato masher until you are happy with the consistency. If you want a chunky jam, don’t mash them at all. Simmer uncovered for another 5 minutes, or until the mixture is thickening.
Step 4
Take the jam off the heat and stir in the
Vanilla Essence (5 mL)
,
Honey (65 g)
, and
Chia Seeds (20 g)
, making sure the seeds are evenly distributed. Let the jam cool for 5 minutes.
Step 5
Pour the jam into glass jars with airtight lids. Store them in the fridge or freezer. Enjoy!
