Step 1
Line a 9x11-inch baking dish with parchment paper or spray with cooking spray.
Step 2
In a large mixing bowl, toss together
Rice Cereal (125 g)
and
Pretzel Sticks (515 g)
. Set aside.
Step 3
In a medium saucepan, stir together
Granulated Sugar (200 g)
and
Light Corn Syrup (240 mL)
. Place over medium-low heat and cook until mixture comes to a light boil, stirring occasionally. Let boil for 1 minute.
Step 4
Remove from heat and immediately stir in
Peanut Butter (320 g)
and
Vanilla Extract (5 mL)
. Stir until smooth. Pour hot peanut butter mixture over rice cereal and pretzels, stir with a wooden spoon until evenly combined.
Step 5
Empty mixture into prepared baking dish and press mixture firmly into pan. Placing your hand in a small sandwich bag works well - nothing sticks! As rice krispies treats cool, prepare topping.
Step 6
Combine the
70% Cacao Chocolate Chips (350 g)
and
Peanut Butter Chips (400 g)
in a microwave-safe bowl and heat in a microwave oven in 30-second bursts, stirring between each time interval, until the chips are completely melted and smooth.
Step 7
Pour topping over rice krispie treats and spread evenly. Sprinkle with extra broken pretzel pieces. Place in refrigerator until chocolate is firm, about 1 hour, or freezer for speedier results.
Step 8
Cut into bars and enjoy! This will make 16-24 bars depending on size.
