Step 1
Allow Unsalted Butter (225 g) to come to room temperature. Preheat oven to 350 degrees F (180 degrees C). Line a 9 x 9 baking dish with parchment paper.
Step 2
Combine butter and Granulated Sugar (150 g) in a mixing bowl and beat until combined. Then beat in Vanilla Extract (5 mL) .
Step 3
In a separate bowl, whisk together All-Purpose Flour (290 g) and Salt (3 g) . With mixer on low, slowly add flour mixture to butter mixture. Mix until the dough starts to form into a ball.
Step 4
Press ⅔ of the dough into the bottom of the baking pan and about ¼ inch up the sides of the pan.
Step 5
Spread the Raspberry Jam (340 g) over the crust, leaving about a ¼ inch border.
Step 6
Mix the Dried Fruits (115 g) with the remaining dough. Sprinkle mixture evenly over the jam. Scatter Sliced Almonds (25 g) over crumb topping. Bake in oven for about 45 - 50 minutes until the top begins to turn golden brown.
Step 7
Cool completely before cutting and serving.
