Spray the airfry tray with Nonstick Cooking Spray (as needed). Set aside.

In a microwave-safe bowl, combine the Green Bell Peppers (75 g), Onions (75 g), and Celery (50 g). Drizzle with half of the Unsalted Butter (2 Tbsp), and toss to combine. Use the Microwave function and cook them at 800W for 5 minutes.

In a small bowl, whisk to combine the Large Egg (1), Sour Cream (2 Tbsp), Dijon Mustard (1 Tbsp), Worcestershire Sauce (1 tsp), Smoked Paprika (1/2 tsp), Cayenne Pepper (1/2 tsp), and Salt (1/2 tsp).

Set aside ¼ cup of finely ground Saltine Crackers (30). Add the rest of the Unsalted Butter (2 Tbsp) to the remaining crumbs and mix to incorporate. Add to a shallow tray.

To a large bowl, add the Lump Crab Meat (455 g), the veggies, wet mix, Scallions (4 Tbsp), and the reserved saltines. Mix to fully combine and break up the crab.

Form into 8 patties. Dredge in the remaining buttered breadcrumbs. Place them around the airfry tray.

Cook for 20 minutes using the Airfry Function, until the top is golden brown.

To really crisp up the cakes, use the broil 1 function to cook for 2-3 more minutes until they are dark golden brown and crispy.

Serve hot with Tartar Sauce (to taste) and Lemon Wedges (to taste). If desired, garnish with Fresh Parsley (to taste) before serving.
