Author's Notes

Makes 18-22 balls.

Store in the fridge for up to 2 weeks or the freezer for up to 3 months.

If the batter seems too wet or sticky add a touch more almond flour. If the batter seems too dry to roll into balls, add another Tbsp or two of water. Alternatively, add a Tbsp or two more water until the texture is perfect for rolling into balls.

Place Medjool Dates (10), Pecans (75 g), Almond Flour (90 g), Ground Cinnamon (1 Tbsp), Raw Cacao Powder (40 g), Chocolate Protein Powder (1 scoop), Pure Vanilla Extract (1 tsp), Water (4 Tbsp), and Maple Syrup (3 Tbsp) in a food processor. Pulse until it forms a ball-like sticky texture.

Add Dark Chocolate Chips (85 g) and pulse just until combined.

Form the dough into 1.5-inch balls and roll in Unsweetened Shredded Coconut (as needed) or raw cacao powder.
