Step 1
Remove the stem and pit of the
Cherries (225 g)

Step 2
In bowl, mix your cherries and
Cane Sugar (10 g)
. Let sit for 2 hours or in the refrigerator overnight.
Step 3
Muddle your cherry and sugar mixture well. Try and get as much juice out as possible.
Step 4
Mix 6 tablespoons of cherry juice, the
Water (60 mL)
,
Limes (1 1/2)
and
Gin (90 mL)
together.
Step 5
Put ice in your 2 cocktail glasses. Pour the gin mixture over the ice, drop in 1-2 tablespoons of the macerated cherry chunks, and add a slice of lime to serve.
