Step 1
Add
Granulated Sugar (10 g)
,
Dark Rum (22 mL)
and
Triple Sec (22 mL)
to a small saucepan. Bring to a boil, stirring until sugar is dissolved. Cook for an additional minute or two until liquor reduces by about 1/3 and mixture becomes syrupy.
Step 2
In a large bowl, toss
Pineapples (170 g)
,
Oranges (170 g)
, and
Peaches (150 g)
with the syrup. If you want a more pronounced liquor flavor, add up to an additional tablespoon of each liquor and toss again. Chill.
Step 3
Combine the fruit mix with
Triple Sec (120 mL)
,
White Rum (240 mL)
and
Dry White Wine (750 mL)
together in a pitcher. Chill for several hours. Serve as is, or with a splash of
Soda Water (to taste)
if desired.
