Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Prepare muffin tin. Put paper liners in about 7-8 muffin tins and spray each liner with vegetable spray.
Step 3
In a medium bowl, combine
Jiffy Corn Muffin Mix (240 g)
,
Granulated Sugar (35 g)
,
Baking Soda (1 g)
,
Baking Powder (2 g)
,
Egg (1)
, and
Buttermilk (120 mL)
. Stir until just combined.
Step 4
Zest the
Lemon (1)
and add lemon zest into the batter. Mix again so that zest is distributed throughout batter.
Step 5
Add
Fresh Blueberries (150 g)
and stir to coat.
Step 6
Spoon batter into prepared liners filling each about 3/4 way.
Step 7
Bake for 18-20 minutes until golden brown. Serve.
