Preheat the grill to 225 degrees F (105 degrees C). Put in some chunks of maplewood with the hot coals for smoking.

Remove membrane on Spare Ribs (2 racks). Rub them with Vegetable Oil (4 Tbsp) and then the Barbecue Rub (55 g).

Grill for 1 hour, then prepare the mop sauce.
step 4
Mix together the Barbecue Rub (4 Tbsp), Barbecue Sauce (120 mL), Water (240 mL), Distilled White Vinegar (240 mL) to create mop sauce. Heat the sauce on a stove top until combined.

Mop the sauce on the ribs and continue to cook for another 3 1/2 hours. Make sure to mop the sauce every 1 hour on the ribs.

With a toothpick, pierce the meat in different places. If it goes all the way through then the ribs are done.

Remove the ribs from the grill and place them on a tray. Wrap aluminium foil around the ribs and let them rest for 30 minutes. Serve with sauce of choice and enjoy!
