Step 1
In a large bowl, mix together the
All-Purpose Flour (125 g)

Old Fashioned Rolled Oats (90 g)

Brown Sugar (110 g)
,
Baking Powder (7 g)
,
Baking Soda (2 g)
,
Ground Cinnamon (3 g)
, and
Raisins (70 g)
.
Step 2
In a separate bowl, mix together
Greek Yogurt (180 g)
,
1% Low Fat Milk (180 mL)
,
Eggs (2)
,
Vanilla Extract (5 mL)
, and
Bananas (2)
. Mash the bananas before adding them. Pour the wet into the dry and mix until batter forms.
Step 3
Heat a griddle or pan to medium heat. Spray with cooking spray. Once hot, add a quarter cup of batter and cook two minutes on each side until browned.
Step 4
Repeat until the batter has been used. This will yield 6 medium sized pancakes. Top with butter and syrup and dig in!
