Take the Assorted Seafood (1.1 kg) out of the fridge.

Saute onion, sausage and Anchovy Fillets (5) in Extra-Virgin Olive Oil (80 mL).

When the onions are translucent and the anchovies have desintegrated, add White Wine (480 mL), Clam Juice (480 mL), finely sliced chili and Water (1.4 L). Bring to a simmer.
