Preheat oven to 350 degrees F (180 degrees C). Spray a 9x13-inch cake pan with nonstick spray.

In a large bowl, combine All-Purpose Flour (280 g), Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener (550 g), Baking Powder (1 Tbsp), Salt (1 tsp), and Ground Cinnamon (2 tsp) and whisk together.

In a second bowl, beat Eggs (4), then mix in Canola Oil (240 mL), Buttermilk (120 mL), Vanilla Extract (2 tsp), Canned Crushed Pineapple (110 g), and Carrots (375 g).

Add carrot mixture to flour mixture and stir to combine. Fold in Walnuts (95 g) and Raisins (110 g). Pour batter into prepared pan.

Bake for 30 minutes or until a toothpick inserted near the center comes out clean. Cool in a pan on a wire rack.

Add Confectioners Sugar Replacement (150 g) to Full-Fat Cream Cheese (170 g), Unsalted Butter (110 g), Vanilla Extract (1 tsp), and whip with a mixer until light and fluffy.
