Heat Extra-Virgin Olive Oil (2 Tbsp) in medium pot over medium heat. Stir in Green Bell Peppers (150 g) and Yellow Onions (160 g) and cook until tender, 5 to 7 minutes. Add Jarred Minced Garlic (1 Tbsp) and cook until fragrant, about 30 seconds. Stir in Lean Ground Beef (905 g) and cook, breaking up with spoon, until browned, about 6 to 8 minutes. Season with additional Adobo Seasoning (to taste) to taste.

Stir in Tomato Sauce (4 cans), Canned Pinto Beans (1 can), Canned Red Kidney Beans (1 can), Canned Black Beans (1 can), Chipotle Peppers in Adobo Sauce (4 Tbsp), and Dried Oregano (2 tsp) and bring to a boil. Reduce heat. Simmer until chili thickens and flavors develop, about 20 to 30 minutes. Season with additional Adobo Seasoning (to taste) to taste.

Divide chili among serving bowls. Top with Queso Quesadilla (225 g), a dollop of Sour Cream (240 g), Avocados (2), Scallions (2), and Fresh Cilantro (2 Tbsp). Serve with Lime (1) wedges.
