Heat Extra-Virgin Olive Oil (3 Tbsp) in medium, heavy pot or Dutch oven over medium-high heat. Add Yellow Onion (1/2) and Carrot (1); cook, stirring occasionally, until onions soften and carrots are crisp-tender, about 8 minutes. Add Zucchini (2), Chili Powder (2 tsp), Jarred Minced Garlic (2 tsp), and Chipotle Peppers in Adobo Sauce (1). Cook, stirring occasionally, until zucchini softens, about 5 minutes.

Stir in Crushed Tomatoes (1 can), Canned Black Beans (1 can), Canned Pinto Beans (1 can) (with liquid), and Canned Red Kidney Beans (1 can) (with liquid). Bring liquid to boil. Reduce heat to low. Simmer, stirring occasionally, until mixture thickens slightly and vegetables are completely tender, about 30 minutes. Season with Adobo Seasoning (1/2 tsp).
