step 1
To make the Lemon Thyme Simple, heat Granulated Sugar (4 Tbsp) and Water (4 Tbsp) over medium until sugar is melted. Remove from heat.

Add half of the Fresh Lemon Thyme Leaves (3 sprigs) and let cool 15 - 20 minutes.

Remove the thyme from the syrup and store in an airtight jar.
step 4
To make the cocktail, add Gin (4 Tbsp) as much simple syrup as you'd like (depending on how sweet you want the drink), and a few leaves of Fresh Basil (2 sprigs) to your glass.

Add Tonic Water (150 mL) slowly, then add ice cubes.

Garnish with a few additional sprigs of Fresh Lemon Thyme Leaves (2 sprigs) and enjoy!
